The coils in an air conditioning system act as a heat exchanger, they transfer the heat out of the air and use refrigerant to cool the air and pump it into a building. There is an evaporator coil and a condenser coil, and like most parts in an air conditioning unit, they are affected by the natural ingress of dirt and dust.
Having a clean filter will help your coils stay clean, but the build-up of dirt and dust is unavoidable. If dust accumulates on the coil it loses the ability to absorb heat because the dust acts as an insulator.
You can visually inspect your coils for this build-up, particular the outside condenser coils, and avoid foreign materials getting into the system, but regular cleaning and maintenance is the best way to ensure the coils are clean.
